We do not rush the fermentation; instead, we listen to the dough and allow it to develop at its own pace. The result is a base that feels alive and ready to become something special.

The Role of High Hydration

Equally important is water. Our dough is mixed with a high percentage of water—what bakers call high hydration. More water means a looser, wetter dough. During fermentation this extra moisture allows gluten strands to stretch and align. When the dough hits the heat of our wood‑fired oven, the water turns to steam and pushes the crust upward. The final pizza is airy, open‑crumbed and tender. High hydration, coupled with patience, creates a crust that is easy to digest and feels light even when topped generously.

Craft over Clocks

We never publish exact hours for our fermentation because each batch is different. Temperature, flour and humidity guide us more than a timer. Our team checks the dough, smells it, touches it and decides when it is ready. This artisan approach means there is no single time frame—only the commitment to starting with the best ingredients and letting nature take its course. We also avoid buzzwords like “24‑hour” or “72‑hour” because what matters is the quality of the process, not the number on a stopwatch.
